Sweet Crepe with Shaved ENVY™ Apples & Chocolate Ganache

For crepe
½ cup all-purpose flour
1 egg
¼ cup whole milk
¼ cup water
1 T melted butter
1 ½ T sugar
½ tsp vanilla extract
pinch of salt

For ganache
½ cup milk
1 cup semi-sweet chocolate chips

1 ENVY™ apple
Nonstick spray

Equipment needed
Small rubber spatula
Medium nonstick pan
2 oz measuring cup or ladle


Place the chocolate chips in a small/medium mixing bowl

In a small sauce pot, warm the milk until it is just about to simmer

Pour the hot milk over top of the chocolate chips and allow to soften the chocolate for approx. 3 minutes

Using a rubber spatula, mix together the chocolate until smooth and then set aside

In a blender, blend all crepe ingredients together for 30 seconds

Scrape down the sides of the blender with a rubber spatula, then blend for another 30 seconds or until well combined.  

Using a chef’s knife, thinly slice the apples into rounds and then cut the rounds in half. Set aside

Heat a medium nonstick pan over medium heat and allow to heat for approx. 30 seconds

Spray the pan lightly with nonstick spray

Using a 2 oz. measuring cup or ladle, quickly pour 2 oz. of batter into the pan and tilt the pan back and forth clockwise until the crepe batter is spread super thin and evenly

Allow to cook over medium heat for 1 min or until it starts to brown on the bottom

Using a spatula or fork, gently lift the crepe and grab with your fingers and flip over quickly

Continue to cook for 45 more seconds or until golden brown

Remove from pan and repeat for desired amount of crepes

Lay the crepe flat, spread 2 T of the chocolate ganache in the middle of the crepe

Top with 6 small slices of apple and then fold the ends in and then roll like a burrito

Drizzle chocolate ganache on top and serve immediately
