ENVY™ APPLE BITES OF HEAVEN

INGREDIENTS

  • 6 Envy™ Apples
  • 16oz Crumbled Blue Cheese
  • 4 T Lemon Juice
  • 2 cups Heavy Cream
  • Salt and Pepper, to taste
  • Garnish with Dill

DIRECTIONS

  1. In a blender or food processor, combine blue cheese and lemon juice until smooth and creamy.
  2. In a separate bowl, whip heavy cream until it forms soft peaks.
  3. Gently fold the cheese mixture into the cream and season with salt, pepper, and extra lemon juice, if desired.
  4. Transfer the cheese mousse to a piping bag fitted with a store piping tip and refrigerate for at least 30 minutes to firm up.
  5. Slice Envy™ apples into rounds about ¼ inch thick. Then remove core with a round cookie cutter.
  6. Place the Envy rounds on a platter, then pipe the cheese mousse onto the round in a rosette or swirl.
  7. Garnish with dill. Enjoy!
