Makes about 8 hotcakes


  • 2 Envy™ Apples
  • 2 Eggs
  • ¼ Cup Honey
  • 1 Cup Buttermilk or Yogurt
  • 1 Cup Self-Raising Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Cinnamon
  • Butter for Frying
  • Fresh seasonal fruit and extra honey & yogurt to serve


  1. Core and grate Envy™ apples onto a cheese cloth, gather up the sides and squeeze out the juice (save the juice into a glass for a refreshing drink)
  2. In a large bowl combine the grated apple, eggs and honey and whisk until foamy
  3. Add the buttermilk or yogurt and whisk until smooth
  4. Sift over the flour, baking powder and cinnamon and fold together to make a fluffy batter
  5. Heat a little butter in a non-stick pan and add a large spoonful of mixture, use the back of a spoon to smooth into an even thin circle, cook over a medium heat until bubbles form on the top of the pancake, then flip and cook until golden
  6. Repeat with remaining batter, keeping cooked hotcakes warm under a clean towel
  7. Serve the pancakes with a dollop of yogurt a fresh fruit and a drizzle of honey
