Envy™ Pasta with Pine Nuts and Mushrooms


Serves 4


  • 2 Envy™ Apples
  • 1/2C Diced Onions
  • 1C Sliced Mushrooms
  • 3oz Pine Nuts
  • 8oz Spaghetti Pasta
  • 3T Olive Oil
  • 4T Parmesan Cheese
  • Salt and pepper


  1. Melt butter in a saucepan on medium-low heat.
  2. When butter is melted add onion and sauté until translucent
  3. Add Envy™ apples, mushrooms, and pine nuts.
  4. Heat, stirring frequently, until Envy™ is lightly golden.
  5. Cook noodles per the directions to al dente.
  6. Space noodles in a serving dish and top with sauté mixture.
  7. Sprinkle parmesan, salt and pepper on top.
