Butter Lettuce & ENVY™ Apple Salad with Shallot Vinaigrette

For the salad
1 head of butter leaf lettuce, loosely chopped (or 5 oz of mixed green lettuces)
2 ENVY™  apples, small diced
½ English cucumber, thinly sliced
1 cup cherry tomatoes, halved

For the vinaigrette
2 T red wine vinegar
3 T extra virgin olive oil
1 T finely chopped shallot
1 tsp Dijon mustard
1/8 tsp kosher salt
20 turns of fresh cracked pepper

Equipment needed
Large mixing bowl
Forks or tongs to toss


Whisk together vinaigrette ingredients until well combined

Lightly toss all salad ingredients and desired amount of vinaigrette
