Pastry
- 3 cups of unbleached white flour
- 1/2 cup cold butter
- 1/2 cup shortening
- 1/3 cup cold water
- Pinch of salt
Apple pie filling
- 6-8 apples core & peel very thin slices
- 1/2 cup sugar
- 3 tablespoons tapioca flour
- 1/2 ground cinnamon
- 1/2 lemon juice squeezed
Directions
Pastry
- Blend fat into flour
- Gradually add water (do not over mix)
- Set aside in fridge to relax while you peel and core the apples for filling
Apple pie filling
- Squeeze lemon juice over apples and toss
- Blend sugar, cinnamon and tapioca in a bowl
- Add mixture to apples and toss
Finishing up…
- Roll dough
- Fill pastry bottom with apples and pack down
- Roll lattice strips for top and crimp edges
- Egg wash and sprinkle with sugar
- Bake pie in oven at 350 F for 1 hour and 15 minutes until pie juices bubble
- Cool and serve with vanilla ice cream
