Baked ENVY™ apples with pecans

Serves 4

Ingredients

  • 4 ENVY™ apples
  • 2 tablespoons butter
  • 3 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ cup chopped pecan nuts

Method

  1. Preheat the oven to 180C. Grease the base and sides of a shallow baking dish. (approximately 22 x 30 cm x 5 cm deep)
  2. Cut the apples in half lengthwise. Scoop out the core and seeds using an apple corer or melon baller and discard. Slice a thin slice off the base of each apple half so they sit flat in the dish. Arrange the apple halves in the dish.
  3. Combine the butter, brown sugar, lemon juice and cinnamon in a small saucepan. Heat over medium heat for 1 to 2 minutes until butter has melted and sugar has dissolved. Spoon the mixture into the hollows of the apple halves and spread a little over the cut surface as well.
  4. Cover dish tightly with foil then bake in the preheated oven for 35 to 40 minutes, until the apples are beginning to soften. Remove the foil, sprinkle pecans over the apples and baste with the juices. Increase the oven temperature to 210C and cook for a further 10 to 15 minutes, until the apples have caramelised and are very tender. Baste occasionally with the juices.
  5. Serve with vanilla ice cream or crème fraiche.
