Ingredients
- 1 ENVY™ Apple
- 2 Portobello Mushrooms
- ¼ C Olive Oil
- 1T Lemon Juice
- 2 Cloves of Garlic, Minced
- 1t Oregano
- 1t Salt
- ½ C Herbed Goat Cheese
- 2 Brioche Buns
- 2 Large Pieces of Butter Lettuce
- 2T Mayonnaise
Instructions
- Slice ENVY™ apples horizontally into thick round wedges and remove seeds using a fork.
- Remove portobello stems to prepare for grilling.
- Combine half of the olive oil, lemon juice, garlic, oregano, and salt in small bowl.
- Using a basting brush, coat portobellos on both side with olive oil mixture.
- Grill stem side down for 2 minutes and then flip.
- Add goat cheese to portobellos and grill an addition 2-3 minutes until cheese is melted.
- Use remaining olive oil to coat ENVY™ rounds and place on grill.
- Grill ENVY™ rounds for about 1-2 minutes per side to lightly char each side.
- Serve portobello with ENVY™ round on brioche buns with mayonnaise and lettuce.
