INGREDIENTS
- 6 ENVY™ Apples
- 16oz Crumbled Blue Cheese
- 4 T Lemon Juice
- 2 cups Heavy Cream
- Salt and Pepper, to taste
- Garnish with Dill
DIRECTIONS
- In a blender or food processor, combine blue cheese and lemon juice until smooth and creamy.
- In a separate bowl, whip heavy cream until it forms soft peaks.
- Gently fold the cheese mixture into the cream and season with salt, pepper, and extra lemon juice, if desired.
- Transfer the cheese mousse to a piping bag fitted with a store piping tip and refrigerate for at least 30 minutes to firm up.
- Slice ENVY™ apples into rounds about ¼ inch thick. Then remove core with a round cookie cutter.
- Place the ENVY™ rounds on a platter, then pipe the cheese mousse onto the round in a rosette or swirl.
- Garnish with dill. Enjoy!
