Grilled Chicken & Envy™ Apple BBQ Sauce
1 Envy™ apple, peeled and diced
¼ Cup Water
¼ Cup Yellow Mustard
½ Cup Sugar
¾ Cup Apple Cider Vinegar
¼ Cup Light Brown Sugar
1 tbs Soy
1 Pinch Cayenne Pepper
1 tbs Chili Powder
10 Turns of Fresh Cracked Black Pepper
2 tbs Unsalted Butter
4 Chicken Breasts
Add all ingredients except chicken to a medium pot.
Bring to a light simmer and cook for 15 to 20 minutes.
Once the apples are soft and tender, remove from the heat and add the mixture to a blender.
Blend until smooth and season with salt to taste. (Note that it may not need any so taste before adding)
Cool and set aside.
Preheat your grill on high.
Let chicken temper at room temperature for 20-30 min.
Brush both sides of chicken breast with barbeque sauce.
Grill chicken on both sides until firm, but bounces back just slightly when touched.
Brush again with more barbeque sauce and let rest 5 minutes. Slice to serve.
