Serves 4


  • 4 Portions of Boneless Salmon
  • 4 Tablespoons of Asian Style BBQ sauce
  • 2 Envy™ Apples, Cored and Sliced into match sticks or julienne
  • 2 Cups Sliced or Shredded Cabbage (1 cup red cabbage 1 cup white if possible)
  • 1 Stick Celery, Finely Sliced
  • ½ Red Onion, Finely Sliced
  • ¼ Cup Mayonnaise
  • 1 Tablespoon Chopped Fresh Herbs – Dill, Parsley or Cilantro etc
  • 1 Lime, Juice and Zest + extra for garnish
  • 1 Tablespoon Toasted White Sesame Seeds
  • 1 Teaspoon Black Sesame Seeds


  1. Pre-heat the oven to 375 degrees F on the grill setting and line a baking tray with cooking paper
  2. Arrange the salmon portion on the paper and spread a generous layer of Asian style BBQ sauce over each
  3. Bake in the oven for 5-8 minutes depending on thickness and size or until just cooked in the center and caramelized on top (alternatively sear in a pan)
  4. For the slaw combine the sliced Envy™ apple sticks, cabbage, celery, and red onion slices and toss lightly
  5. In a separate bowl whisk the mayonnaise, herbs and lime juice & zest
  6. Fold the dressing and colored sesame seeds into the slaw and toss together
  7. Divide the apple slaw between the serving plates and top with the glazed salmon
  8. Sprinkle with extra sesame seeds and serve with lie cheeks
