Delicious bites of juicy apple with flavorful caramelized pork.
Serves 4-6
INGREDIENTS
- 2 ENVY™ Apples
- 2 lbs trimmed pork belly
- 2 cups apple juice
- 2 star anise
- 1 cinnamon stick
- ½ cup hoisin or char siu sauce
- 1 teaspoon sesame seeds
- Skewers
METHOD
- Pre-heat the oven to 340°F. Arrange the pork belly skin-side-up in a small to medium sized roasting pan or similar.
- Pour the apple juice around the outside and add the star anise and cinnamon stick.
- Cover with a lid or foil and bake for 2 hours. Remove the foil and transfer the pork to a cooling rack, reserve ¾ cup of the cooking juices.
- Combine the cooking juices with the hoisin or char sui sauce and add the sesame seeds.
- Cut the pork belly into single/bite sized portions and arrange on a lined baking tray.
- Cut the apples into quarters, remove cores, and cut into short slices across the wedges.
- Arrange 2-3 apple slices on top of pork portions and secure with a skewer.
- Drizzle the apple and pork with the glaze and grill for 10-15 minutes until caramelized.
- Serve with coleslaw as an entrée or use small portions as hors d’oeuvres.
