Ingredients
- 6 ENVY™ apples
- 1 cup fennel, thinly sliced
- 2 T Lemon juice
- ½ T Honey
- ¼ cup Apple cider vinegar
- ½ cup Apricot preserves
- ½ cup Extra virgin olive oil, separated
- 1 T Dijon mustard
- 8 cups of chopped romaine lettuce
- 1 cup dried cranberries
- ½ cup toasted almonds, crushed
- Salt and pepper, to taste
Directions
- Mix fennel with lemon juice and honey and set aside to marinate for 5 minutes.
- Slice one ENVY™ apple into thin wedges for salad top and remaining ENVY™ apples into matchsticks.
- Mix apple cider vinegar with apricot preserves and stir until mixed. Then add mustard and olive oil to complete the dressing and set aside.
- Combine romaine, fennel mixture, and ENVY™ matchsticks and place into salad bowls.
- Add dried cranberries, crushed almonds, salt, and pepper. Then drizzle dressing .
- Top with ENVY™ apple slices.
