Makes 12 Servings


  • 1 Cup Plain Flour
  • 1 Cup Bran Flakes
  • ¾ Cup Brown Sugar
  • ½ Cup Chopped Dates
  • ½ Teaspoon Pumpkin Pie Spice
  • 2 Teaspoons Baking Powder
  • 1 Cup Butter, Melted
  • 1 Egg, Beaten
  • ¾ Cup Milk
  • 2 Envy™ Apples
  • 1 Tablespoon Maple Syrup


  1. Pre-heat oven to 375 degrees F and line a muffin pan with cup cake papers
  2. Peel and core the Envy™ apples and dice finely, toss with the maple syrup
  3. In a large bowl combine the flour, bran flakes, brown sugar, dates, pumpkin pie spice and baking powder, mix well
  4. In a separate bowl whisk the melted butter, egg and milk together
  5. Add half the maple apple mixture to the dry ingredients
  6. Pour the wet ingredients into the dry and fold together until just mixed
  7. Spoon evenly into the muffin tin cup cake papers
  8. Using the remaining maple apple mixture, add a small teaspoonful to the top of each muffin
  9. Bake for 20-25 minutes until the muffin mix is just set and apple topping is golden
  10. Allow to cool for 5 minutes before removing from the tin
  11. Serve with butter or dust with powdered sugar
