Envy™ apple slices baked to a feather light crisp perfect for serving with soft cheese, a selection of nuts, seeded crackers or wafers and a delicious, salted caramel sauce for dipping!

Serves 4


  • 4 Envy™ apples
  • ½ cup brown sugar
  • 20gms butter
  • 1 cup cream
  • Dash of vanilla extract
  • Pinch of flakey sea salt
  • Soft cheeses like a creamy blue and ripe brie, seeded wafers, selection of roasted nuts to serve.


  1. Pre-heat the oven to 140°C, and line a baking tray with cooking paper.
  2. Slice the Envy™ apples very thinly, use a mandolin if you have one. Remove any visible seeds.
  3. Arrange the apple slices in a single layer on the lined tray and bake for 40-60 minutes until pale golden and dry, allow to cool and crisp up. (Store in an air-tight container when completely cold).
  4. For the dipping sauce, combine the brown sugar and butter in a medium saucepan.
  5. Melt together then add the cream, bring to the boil, whisking occasionally.
  6. Simmer for 3-5 minutes until golden and glossy.
  7. Remove from the heat, then add the vanilla and salt.
  8. Allow to cool and thicken before serving.
