Makes 12 Servings
Ingredients
- 1 Cup Plain Flour
- 1 Cup Bran Flakes
- ¾ Cup Brown Sugar
- ½ Cup Chopped Dates
- ½ Teaspoon Pumpkin Pie Spice
- 2 Teaspoons Baking Powder
- 1 Cup Butter, Melted
- 1 Egg, Beaten
- ¾ Cup Milk
- 2 ENVY™ Apples
- 1 Tablespoon Maple Syrup
Instructions
- Pre-heat oven to 375 degrees F and line a muffin pan with cup cake papers
- Peel and core the ENVY™ apples and dice finely, toss with the maple syrup
- In a large bowl combine the flour, bran flakes, brown sugar, dates, pumpkin pie spice and baking powder, mix well
- In a separate bowl whisk the melted butter, egg and milk together
- Add half the maple apple mixture to the dry ingredients
- Pour the wet ingredients into the dry and fold together until just mixed
- Spoon evenly into the muffin tin cup cake papers
- Using the remaining maple apple mixture, add a small teaspoonful to the top of each muffin
- Bake for 20-25 minutes until the muffin mix is just set and apple topping is golden
- Allow to cool for 5 minutes before removing from the tin
- Serve with butter or dust with powdered sugar
