ENVY™ Apple and Cucumber Salad with Roast Sesame Dressing

Serves 4 to 6 as a side dish.

Ingredients

Roast Sesame Dressing:

  • 2 tablespoons toasted sesame seeds, crushed in a mortar and pestle
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons sesame oil
  • 2 tablespoons mirin
  • 1 teaspoon finely grated fresh ginger

Salad:

  • 3 ENVY™ apples, thinly sliced
  • 1 English cucumber, thinly sliced

Garnish:

  • ¼ cup fresh herbs – cilantro and mint
  • 2 tablespoons chopped roast peanuts
  • 2 teaspoons toasted sesame seeds, extra
  • Lime wedges

Directions

  1. To make the dressing, combine the sesame seeds, soy sauce, lime juice, sesame oil, mirin and ginger in a small bowl. Set aside.
  2. Place the sliced ENVY™ apples and cucumber into a shallow bowl. Drizzle the dressing over and toss to combine.
  3. Top with cilantro, mint, peanuts, and sesame seeds. Garnish with lime wedges.
