Serves 4 to 6 as a side dish.
Ingredients
Roast Sesame Dressing:
- 2 tablespoons toasted sesame seeds, crushed in a mortar and pestle
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 2 teaspoons sesame oil
- 2 tablespoons mirin
- 1 teaspoon finely grated fresh ginger
Salad:
- 3 ENVY™ apples, thinly sliced
- 1 English cucumber, thinly sliced
Garnish:
- ¼ cup fresh herbs – cilantro and mint
- 2 tablespoons chopped roast peanuts
- 2 teaspoons toasted sesame seeds, extra
- Lime wedges
Directions
- To make the dressing, combine the sesame seeds, soy sauce, lime juice, sesame oil, mirin and ginger in a small bowl. Set aside.
- Place the sliced ENVY™ apples and cucumber into a shallow bowl. Drizzle the dressing over and toss to combine.
- Top with cilantro, mint, peanuts, and sesame seeds. Garnish with lime wedges.
