Ingredients
- 4 ENVY™ apples
- 2 tablespoons butter
- 3 tablespoons brown sugar
- 1 tablespoon lemon juice
- ½ teaspoon cinnamon
- ¼ cup chopped pecans
Directions
- Preheat the oven to 350 °F. Grease the base and sides of a shallow baking dish (approximately 9 × 13 × 2 inches deep).
- Cut the apples in half lengthwise. Scoop out the core and seeds using an apple corer or melon baller and discard. Cut a thin slice off the bottom of each ENVY™ apple half so they sit flat in the dish. Arrange the apple halves in the dish.
- Combine the butter, brown sugar, lemon juice and cinnamon in a small saucepan. Heat over medium heat for 1 to 2 minutes until butter has melted and sugar has dissolved. Spoon the mixture into the hollows of the ENVY™ apple halves and spread a little over the cut surface.
- Cover dish tightly with foil then bake for 35–40 minutes, until the ENVY™ apples are soft when pierced with a knife. Remove the foil, sprinkle pecans over the apples, and spoon the pan juices over the top.
- Increase the oven temperature to 410 °F and bake another 10–15 minutes, spooning the pan juices over the ENVY™ apples occasionally.
- Serve with vanilla ice cream, crème fraîche or sour cream.
