1 Envy™ Apple
2 Portobello Mushrooms
¼ C Olive Oil
1T Lemon Juice
2 Cloves of Garlic, Minced
½ C Herbed Goat Cheese
2 Brioche Buns
2 Large Pieces of Butter Lettuce
Slice Envy™ apples horizontally into thick round wedges and remove seeds using a fork.
Remove portobello stems to prepare for grilling.
Combine half of the olive oil, lemon juice, garlic, oregano, and salt in small bowl.
Using a basting brush, coat portobellos on both side with olive oil mixture.
Grill stem side down for 2 minutes and then flip.
Add goat cheese to portobellos and grill an addition 2-3 minutes until cheese is melted.
Use remaining olive oil to coat Envy™ rounds and place on grill.
Grill Envy™ rounds for about 1-2 minutes per side to lightly char each side.
Serve portobello with Envy round on brioche buns with mayonnaise and lettuce.
