Envy Apple Kale Salad

- 1 bunch Kale, ribs discarded, leaves finely chopped
- ½ cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 2 Envy Apples, quartered and cubed
- ½ red cabbage, shredded
- 1 cup cooked quinoa
- Salt and pepper to taste
Directions
Massage kale in mixing bowl for 2 minutes
Pour olive oil, lemon juice and honey over kale and toss to coat
Fold Envy apple, cabbage and quinoa into the salad
Add salt and pepper to taste
