CURRIED CHICKEN SALAD
- 2 Envy apples
- 2 cups cooked chicken breast, shredded
- 1/2 cup diced cucumber
- 1/2 cup raisins
- 1/4 cup thinly sliced green onions
- 1 cup plain low-fat yogurt
- 2 tbsp mango chutney
- 1 tsp curry powder
- 1 bunch watercress, rinsed and crisped
- 1/4 cup chopped peanuts
Core and dice apples into 1/2-inch cubes. Combine with chicken, cucumber, raisins and green onions in a large bowl. Prepare Spicy Yogurt Dressing by stirring yogurt, chutney and curry powder together thoroughly in a separate bowl.
Add to chicken mixture and combine thoroughly. To serve, divide watercress among serving plates. Arrange chicken salad mixture over watercress and garnish with chopped peanuts.
